Sorry in advance.

Can someone confirm if I walk into an O2 (UK) store today and buy myself an iPhone, can I take it home and unlock (and activate) it?

What do I need to do such things?

Sorry for such a lame question, but I get confused with all the info over the web.
 
Assuming it wont be preloaded with the very latest firmware, ll you'd need to do would be make a custom firmware with PwnageTool that preserves the 02.28.00 (comes with firmware 2.2) baseband, and Jailbreaks. Then install yellowsn0w to unlock.

There are plenty of guides/tutorials out there on the internet.

Also, once YellowSnow has been run, can you then remove the Installer / Cydia Apps?

It'll probably come with 2.1, or 2.2. :)

You don't have to install Installer in the first place, and you can remove Cydia, but I'd reccomend keeping it. Yellowsn0w may update.
 
Ask them how long they have had them on the shelf... Chances are they get frequent shipments of them.. The newer they are, the chances for the latest firmware is high.. maybe not 2.2.1, but atleast 2.2..
