Final Cut Pro X will work, certainly, though it will be slow at performing some functions because of the integrated GPU. If you are a hobbyist, you will be fine, but if you are a professional, then you should look at an iMac or MacPro.
Many people complain about the GPU in the Mini, but I have found it very capable. It may not give you 80 fps and beautiful shadows in Special Ops Death Squad VI, but for most purposes, it will do just fine.
Final Cut Pro X will work....but if you are a professional, then you should look at an iMac or MacPro.
If you are a pro, you are probably better off with the Mini (unless you have money for the 12 core pro, the fastest mini beats the quad), as that allows you to drive a much needed video capable monitor. Playback on an iMac is horrible, as it only shows 30p content well.

Even though only a small number of functions in Photoshop are GPU-accelerated?The Mac Pro has a much much much better GPU which is more or less the only thing the mini really lacks.
I have minis and Pros and for photoshop etc the Pro is heaps ahead.
