Any computer will "work" -- the question is one of degree. Most Photoshop usage, I would suggest, is actually a fairly trivial task for today's CPUs.
Final Cut Pro X will work, certainly, though it will be slow at performing some functions because of the integrated GPU. If you are a hobbyist, you will be fine, but if you are a professional, then you should look at an iMac or MacPro.
Many people complain about the GPU in the Mini, but I have found it very capable. It may not give you 80 fps and beautiful shadows in Special Ops Death Squad VI, but for most purposes, it will do just fine.

I really like iMac but I might keep my LCD monitor that comes with desktop PC I built 4 years ago. Or do I have to sell the whole desktop PC?? Decision decision
If you are a pro, you are probably better off with the Mini (unless you have money for the 12 core pro, the fastest mini beats the quad), as that allows you to drive a much needed video capable monitor. Playback on an iMac is horrible, as it only shows 30p content well.
In terms of CPU performance the mini might be quicker then the pro, but thats not why people say get a pro. The Mac Pro has a much much much better GPU which is more or less the only thing the mini really lacks. For professional usage the Mac Pro is a lot better due to the expandability and reliability of the machine.
I have minis and Pros and for photoshop etc the Pro is heaps ahead.

What I wrote was about myself and what I think. My minis, despite having a quicker CPU (i haven't updated my sig, I have two brand new ones) are for some reason a lot slower in photoshop, after effects, 3D CAD programs and other programs I use then my 2009 and 2010 Mac Pro's. Why? i have no clue, its just the way it is.
So obviously, in my case, my advice leans towards the Mac Pros as for me they have been the fastest, most reliable and best suited machines.
I am not saying don't buy a mac mini, they are very capable little machines and I work on them as well but like I said my Pros do a better job

Once upon a time, I used to build my own PC's, and what I learned is not all Main Boards are created equal.
I could use the same RAM, same Processor, same GPU, and the same software on three different Main Boards, and get three VERY different scores on bench tests.
After using my Pro for even minor work in PS, I can't even watch the mini do it, let alone try to use it in PS!
