So I have a 2017 MBP with the Touch Bar, and a second generation iPad Pro 12.9 entry level.

I use a computer for light Excel use, to create rudementary graphs, and use the iPad for watching tv shows streaming at the gym while running.

I also have to create a photobook once a year using the Apple Photos service (I know I have to use a third party service in 2019).

If I sell my current iPad and MBP, is that that a good call? Or am I underutilizing my current second gen iPad 12.9”?

You are using a MacBook Pro with Touchbar for light Excel use and a 12,9" iPad Pro for TV shows at the gym?! Isn't that extremely overkill in both ways?
Wouldn't be a MB Air and a standard iPad more than adequate? Or, for light Excel use, ditch the MB and just keep the iPad?

Speaking as someone who likes to use an iPad for most of their day to day work but has to have a MacBook for more complex documents, Excel is the task for which the iPad is least suited. You can do it; but compared to a MacBook with a mouse or trackpad, it’s a LOT less satisfactory and fiddly. If you have to Excel regularly, I would not ditch a laptop. Ditto photo books and complex layouts. Sounds to me like a new MacBook Air and regular iPad might be your best bet, I agree with posters above.
