Every year whenever a new OS comes out I always do a fresh clean install and reinstall everything. However, I just got this computer today and I want to start getting it set up, but I also don't want to get it all set up to just do a fresh clean install of Big Sur in a week or two. Do we think Big Sur will come out soon, I've also been reading it's buggy AF so maybe it's a bad idea to install it early anyways?

I have been testing upgrades for our products and do not see downside to upgrading. I would wait for the .1 release. Apple has been rushing releases across the board.
An alternate would be to install on another volume in the container, migrate, and then delete the old Catalina volume. All caches and cruft are deleted in that process. Only the pure Applications, data, and settings are retained.

I bought a iMac 2020 (prev 2017) and made a clean install with the latest Beta Installer.

Just install the release when it comes out, don't worry so much.
