i'd go for the new 250GB western digital with 16mb of cache. it's amazingly fast (once my current drive fills up i'm going to get one). maxtor also makes several models with 16mb of cache in 200, 250, 300, 400, and 500GB sizes.
Western Digital 400GB hard drives have benched really well...I'm going to get that one after I buy a raptor for OSX.
I have a 500GB Hitachi DeskStar as my storgae drive and a Raptor as my boot drive ...

I like the Hitachi drives. They are fast and ultra quiet. That said... every single one I have bought has failed at about one year. Fortunately they carry a three year warrantee and Hitachi is very good about the warrantee if slow. Keep another drive around, which you should anyways for backing up yoru data, so that when you have to send in the Hitachi you have something to run from. The good news is the replacement drives Hitachi sends me have never failed (yet). 
I also have Fuji (loud), seagate (good), Maxtor (new ones are excellent, fast and quiet but I used to have trouble with them and hear of others having trouble), Western Digital (good drives but the power supplies fail in every external WD drive I have had, usually out of warrantee, sometimes in) and some others of less mention.

Seagate or Hitachi
For your PM G5, go for a SATA drive that's at least 250GB - the "standard" (commonly available) ones with an 8MB cache sell at some very sweet prices (like a Seagate 300GB SATA from tigerdirect at $95 after rebates or a Hitachi 250GB SATA for $90 after rebates). The current sweet spot for hard drives, in terms of capacity, seems to be between 200GB to 300GB - those with higher capacities cost substantially more than these. Since the PM G5 has only two drive bays, spend wisely on the highest capacity you can go for.
If you can afford to spend more, going for the SATA drives with 16MB cache would be bettter. But they sell at much higher prices than the commonly available 8MB cache ones.
I recommend Seagate or Hitachi - both of them provide 3 or 5 year warranties on their drives. Other brands provide a 1 year warranty on most of their models and 3 years on a few models. I wouldn't go anywhere near Maxtor or Western Digital (looking at quality and warranty). I second Seagates. Without question, the best drives on the market. Five year warrenty and I have never heard of one failing. They are the only drives that I buy.

Another Vote for the Seagate 'cuda 250 GB SATA.
I considered replacing my stock Maxtor 160 GB with a 74GB Raptor Drive, but read too many reviews saying they weren't appropriate noise wise
for an audio workstation.
