Hi!

I'm using a Mac Studio and my work data is on a 512 GB stick SSD.
I want to set up WD 512 GB HDD as a sort of mirroring RAID whereby at the end of the day the changed / worked on / data gets mirrored onto the HDD. (e.g. the new/updated files)

Is there any good software available for this?
I'm using Ventura 13.2.1.

What you are describing is more of a backup system vs a RAID. A RAID 1 array would mirror all your data between 2 disks in real-time. A backup system could be configured to backup just changed files. Apples Time Machine can do that. SoftRaid software can be used to setup a RAID 1 mirror but I wouldn’t recommend it with 2 different kinds of media (SSD & HDD).

Can TimeMachine be configured to NOT back up the internal drive but back up 1 external SSD to 1 external HDD?
 
You should be able to by adding/removing the drives from the exclusion list. You could also try Chronosync or Carbon Copy Cloner or rysnc if you are comfortable with the terminal.
