I need help...i have 1.1.1 and not sure what to do first before unlocking

I'm an iphone newbie. I just acquired a 1.1.1 from a relative. Should i update the phone's software to the latest or just keep it?

Then what do i do next? Jailbreak it? and install install.app?

The person who gave it to me use to have AT&T and now i'm gonna bring it back to asian to use.
