Take a look at this:

I noticed some interesting things in my iPad crash logs. First, it refers to the os as ”iPhone OS 15.3.1” instead of iPadOS, which is probably back from the early days when that was what it was called, and it’s not like they can change it now.

Also, there’s an identifier called “BogusFieldNotActuallyEverUsed”. Do you think it’s a joke?

Internally, the OS name has never changed (it's probably relied upon by too many apps and system components that expect that specific string for version/platform validation, etc). As far as the bogus fields — they may just be placeholders for something they either plan to use at some point or were planning to use but ended up never doing so, or possibly 'test' fields to verify that their log parsing tools are working properly.
