I dunno. It doesn't seem late enough in April, although Apple may just be giving themselves room to manoeuvre. Also who's to say they'd release the 3G on a Saturday. Many believe the Saturday release date is to bring in big crowds for the media's benefit. But the press and media aren't going to give the 3G launch anywhere near the same amount of coverage as the WiFi only launch; to most, it'd seem like old news.
I'd imagine the 3G version launch will coincide with the International launch in late April. For a stab at a date I will say the 27th, I remember with the last version of iLife, they said it would be available in 'late January' which turned out to be the 27th. Just a guess, which is all any of us can really do.
I really hope it doesn't launch on a Saturday again. I had mine shipped to work. I don't work on Saturday and don't want to sit there all day waiting for the fedex dude and I DEFINITELY don't want to wait until the following Monday.
And the first of June other countries, which weren't listed for the late april release, will also get the iPad. Just a guess.

I'm pretty certain that you can change the shipping address at any time right up until the iPad ships. I'm in the same boat as you.
For no particular reason, I'm going with Weds April 28. Also guessing that we find out on April 3.
