Is there any way to move the apps around on your iPhone from your desktop with the new changes? I used to be able to plug into iTunes, go to apps from the iPhone screen and then map my screen out very easily. It seems that is gone since they removed the app store from iTunes. It's much harder to do it from the phone. Does anyone know if there is a way to do that again?

iTunes 12.7 removed this feature when they removed the App Store.

You could install 12.6.3, which Apple released after 12.7 and is mainly aimed at business use of iTunes.

As mentioned above you can not use iTunes any longer but IOS 11 has extended function for moving and arranging apps.
