How! It’s taken photos from a gig I went to, and made an album for the artist!

Is it a combination of location and date? Audio? Does it visually recognise the band?!

Pretty surprised and impressed by this

Yup, it's a Photos feature:

"The Photos app recognizes significant people, places, and events in your library, then presents them in curated collections called Memories. You can also create your own Memories, and share them with friends and family."

 
Yeah I’m familiar with memories, they’re usually quite straightforward picking up places from geo data, people I’ve previously identified and basic ai things like birds and trees..

I’m a lot less clear on how it identifies a band name I’ve seen.. I’ve certainly not seen this before

Oh I understand what you mean now. Does the Photos album have the band's name?

It knows that Chvrches was at the location you took those photos on February 9, 2019. It has a database of thousands of event dates and locations.
 
Not new. Did it for me maybe 2-3 years ago for fishbone
Interesting. Its not done it for any of my photos like that before. Its just surfaced it 18 months later! Assumed it may have come from iOS update but maybe not
