Spark is the best in my opinion by a mile, but I still would only rate it about 7/10. I genuinely do not understand why it's so hard to make a decent email app.

I really wish Apple gave enough of a toss to develop the native email app and make it look like it was designed this millennium. All it needs is the ability to snooze/schedule email and it would be perfect for my needs.

I have a gmail account and have used their Inbox app for a few years now. I think it's great because of the visuals of it. I wish the native mail app had a few of those features that I could use both on the iPhone and on my Mac.

What do you define as 'perfect' e-mail app? What features are you looking for? There are a lot of nice third party e-mail apps and also Apple own e-mail app is not bad as well.
See also my comparison here with a lot of features compared (maybe not fully up to date anymore but still handy I think).

Instant email notifications when emails come in. Be able to be set as the default email client in iOS.

Instant email notifications when emails come in. - You can with many apps as long as you set your Notifications on.
Be able to be set as the default email client in iOS. - That is a limitation from Apple unfortunately I was hoping to see as of iOS10 but unfortunately not.

The problem with email is that Apple Mail is too basic & every other app that has features wants you to store / filter your email on / through their servers which is...terrible.

Have you tried AirMail? Definitely my favorite email app of all the ones out there. Clean & simple but stil highly customizable.

Airmail is nice, but it doesn't handle meeting invitations properly. It presents the invitation, but won't let you accept/decline like Mail and Spark do.

I use Apple Mail on all my Apple devices (iPhone 6, iPad Air, MacBook Pro). My mail email address is through Verizon. AOL now owns them but allows the @verizon.net address to still work. They are recommending we change from Apple Mail to their AOL mail, since they say Apple Mail is not as secure. But they show pop.verizon.net listed as supported. Their instructions say to go into Mail Accounts and choose AOL and set up my mail there. They say that would set up my AOL account in Mac Mail.

I just want to verify that doing this would allow me to keep using Apple Mail as I already do. I assume I need to do this on all my devices. I just don't want to switch over to some AOL interface for my mail.

Thanks.
