So I backed up my data to iCloud which included apps, docs and photo's. Unless I'm mistaken, the usefulness of restoring this data from iCloud is somewhat limited. Your only option of "restoring" data is in the initial setup process. You are not presented with restoration options after a device has been set up.

Take this scenario. My Wall Street Journal app on my iPad completely wigged out. I decided to completely uninstall it and try again. WSJ was backed up to iCloud. However, after re-installing the app, there's no way for me to restore its settings from the backup that was made to iCloud.

Seems to me the intent of iCloud (currently) is to restore your data during initial setup only. You cannot pick and choose what data is to be restored.

I hope I'm wrong on this.

Same way in ITunes. The preference files may remain on the device but at its core, if you delete an app on your phone, hook it to iTunes and reinstall that one app it doesn't come with its settings. If you want the app again after you delete it, while you can't restore it from iCloud, you restore from purchase tab in App Store. Again, preference file should still be there so many settings may already be setup when you reopen.
