Any recommendations on which USB to use as backup to files stores in the iCloud.

I don't want to risk losing additional iCloud files with the Catalina beta.

Also, any thoughts on how to backup files in the iCloud to the USB? Can it be automated or is it manual?

Make sure in iCloud preferences that "Optimize Mac Storage" is not enabled, let all files sync down locally to your Mac. Then use TimeMachine, Carbon Copy Cloner, or Syncronize Pro X to copy the files to an external USB drive.

As for USB drive, any decent one from WD, G-Tech etc.

I use ChronoSync for these types of tasks. The remote agent allows me to centrally manage other systems in the house. This utility is extremely capable and flexible and can be set to handle tasks on a calendar.
