iCloud deleted my calendars

If you enable iCloud calendars your calendars are moved to iCloud. Despite suggestions to the contrary, short of restoring them from Time Machine, there doesn't appear to be a way to move them back to your local machine if you later decide you don't want to use iCloud. So once enabled, that it, all your data is in the iCloud. Big gotcha!

If you use iCal, you can easily move them back to your Mac only. In iCal, just export each individual calendar to your desktop. Then, create a new calendar in iCal "on your mac" only, then reimport the data. Quite simple. I've done it multiple times over this beta testing period.

Note that this does NOT work if you use an iCal backup. You have to click on each calendar in iCal and then choose export.

Good suggestion

ItsGavinC -- thanks. That's the answer. Though, I have 20 calendars and Apple really should provide a more graceful way to back out of iCloud and thus better embrace the concept of "open data."
