I use Google Apps for business on a few different email addresses and find it's great.

My @icloud email is so slow and cumbersome, often giving errors etc. I want to get rid of that but I can't edit my email on my @icloud apple ID.

Is there a way for me to setup a new apple ID and transfer everything over?

When you log in, you can edit your profile. One of those edits is "change Apple ID". Clicking on that will ask you for a new email address you want to use.

I want to remove the icloud email from my apple ID entirely and use gmail.

You can still use your icloud email account as your icloud login but use gmail for email. Changing the address associated with icloud won't make mail run faster.

Oh but it will.......as long at the flux capacitor is generating the required 1.21 gigawatts of electricity.

Did you add the gmail to the account first?
I don’t think you can simply hit a change button without a secondary email being added first

Correct. I've had a non-iCloud email address as my Apple ID since the dawn of time. My Apple ID is a Fastmail address.

I think bruinsrme is correct - add your @gmail as a secondary then you should be able to make it your Apple ID.
