Is it possible to change the beginning of (before the @) an @icloud.com email address to something else?

I don’t mind having to delete the email and make a new one

You can create an alias that would be attached to your current iCloud email. You can’t change the name of your current email account. Create a new account with the name you want, unless the one you are currently using as purchases tied to it. If that is the case, you can create the alias or live with what you have.

By new account do you mean Apple ID?

Yes. When you create a iCloud email account, you are actually creating an Apple ID. If you want to create a new Apple ID, you can do it from the iPhone but, you need to be signed out of iCloud in order to see the option to create a new Apple ID.

How to Create an iCloud Email

If your Apple ID/Apple Account isn't an iCloud.com email account, create one now to access Apple email. Even if you don't have an Apple Account, you can still create an iCloud email.

Agree with @Namara on needing more info, as it sounds like you are trying to do this on an iPhone, which is not possible. Need access via an iPad, computer (PC or Mac). Other make tablet might be possible as well.
