I downloaded iTunes 10.5 and the cloud took over everything:(

I thought it was a good thing until I learned that Lion is not available for my Mac Book Pro. I have everything in the cloud and can't get it back because I did a full HD clean and now all my music and apps are in the cloud and I can't retrieve them.

Can someone please help me before I connect my iPad to my comp. and loose all my books too:(http://cdn.macrumors.com/vb/images/smilies/eek.gif
