I have family sharing turned on for two other family members. I just upgraded to 200gb storage plan BUT I don't want one of those to share the storage.
Can I turn that persons storage access off from my device or do they have to opt out of the storage option from their device?

I would say go to Settings > yourName > iCloud > Manage storage

There you'll need to find an option to stop sharing storage.

When doing that it's all or nothing. You can't individually manage who does and who does not have access.
