iCloud syncing: All or nothing?

Hi, I'm curious if when you use iCloud to sync your iPhone if it you have to sync everything via iCloud once it's activated?

Basically, I want to know if I could do the following:

Sync purchased, apps, music, videos, and app data via iCloud, but still use iTunes syncing (usb or WIFI) for other stuff (mostly non iTunes music and videos).

If I'm correct Aps and music has no need to sync with iCloud, iTunes just remembers items you have purchased over the years.

You are still able to manually sync any items you require on your iOS device in your iTunes library via wifi sync.

1. Purchased apps, music, videos can be downloaded back from app store/itunes on the device on the fly from 'itunes in the cloud' manually at any time.

2. Music, apps, video syncing, such as playlists and collections that are changing over time can currently only be synced via iTunes usb/wifi.

You only have these options for syncing.
