They should sell a modded Mac mini server where one of the hard drives is replaced by an eSATA port.
 
Get a Mac Mini (Server), remove one hard drive or the DVD-Drive, connect a SATA-2-eSATA cable and guide it out through the bottom cover.
There you go, eSATA Mac Mini (Server).

Have you ever owned or own a Mini server?

Just wonder if there is something in the server software that inhibits cpu slowdown when accessing/using 2nd drive.

I very much like your idea above. Know anyone using it?

I am not sure it's that easy to rotate the cable to close.

Maybe someone would try this and then sell nicely cut replacement covers.

That would be so hacky. Someone could design a taller cover with an eSATA connector in it.
