I'm just wondering because I'm thinking about doing it, but I don't want to permanently mess up my phone
 
APN is a software change.

I would imaging that the iPhone will restore all APN data to factory defaults when performing a network reset. If all else fails you could just restore your phone.
 
For further reference, even though you cannot change your APN manually through the Settings page, changing APNs is allowed by Apple, and merely adds a custom profile to your phone.

You can use unlockit, or generate your own custom profile through Apple's iPhone Configuration Utility. They both accomplish the same thing, and are user reversible without damages, or even needing to reset anything in your phone.
