iPhone If I jailbreak with Absinthe, will it update my iOs?

I have a 4s with 5.1.1. I DO NOT want to upgrade to 6.1. Absinthe tells me that I will need to restore my phone after I jailbreak it. But when you restore your phone, doesn't it automatically upgrade to the newest iOs?

I am attempting to empty out the wretched "Other" space occupied by so-called "deleted" SMS attachments.

Absinthe is a jailbreak.
Like all other jailbreak tools, they jailbreak, they do not update firmware.

I am not asking if Absinthe itself is going to update my phone.

The instructions say, "Once your backup is complete return to your device and go to Settings – General – Reset – Erase all Content and Settings...Once jailbroken return to iTunes and restore your backup from earlier. Right click on your device name under the ‘Devices’ menu in the left panel of iTunes and click ‘Restore from Back Up."

My question is, does the Apple Restore from Back Up function automatically update your iOs even as it replaces your files and settings?

You don't need to do any of that.
Back up/Sync your phone in iTunes
Use Absinthe to jailbreak it.
Done !

No, it doesn't.

There are actually two different functions in iTunes both called "restore." One is restore as in completely delete everything from your device and reinstall the firmware. Since Apple only lets you install the most recent firmware, doing this first type of restore forces you to upgrade to the current firmware.

The second type of restore is "restore from backup." This just takes the system settings and app data contained in a device backup and copies them to your device. It does not reinstall the firmware, so it won't force you to upgrade, and if your device is jailbroken, it doesn't affect your jailbreak. The Absinthe instructions you cited is telling you to do this second type of restore, that is to "restore from backup." It would be nonsensical for the instructions to tell you to do the first type, the full restore of the device, because that would send it right back to a non-jailbroken state.

Only if the following are true:
You used iTunes to restore previously to 5.1.1 - Factory fresh or OTA update to 5.1.1 does not qualify.
You must have saved your 5.1.1 SHSH after the iTunes restore to 5.1.1

Because of the multitudes of bugs in the "updated" version 6 iOs. You know, little things like randomly erasing all your contacts or photos, or freezing the phone entirely.

I've never even heard of this happening just from being on iOS 6.
