Restore as new (aka reinstall and start from scratch), that's almost always the advice given when there is a problem. If the data can be corrupted so easily, why should I trust Apple pay?

Corruption has to do with stability and data integrity, not overall security. Even if your data was corrupted (if it's setup as new, that's very unlikely), the security protocols in place that have been established via Apple/banks are not at risk.

Whilst I’ve never had any problems restoring a backup I’ve never started from scratch and I’ve always moved from phone to phone (right back to iPhone 4) using a backup and I would like to start from scratch but I wouldn’t know how to restore text messages.

I have a problem with my iPhone 7 and apple support want me to wipe the phone and use it for a few days to see if that resolves the issue. I’m not sure how I would be able to ever go back to a backup if I used my phone for several days as I’d loose all the data I sent/received in that small window.
