if the 21.5 iMac gets quad core processor

Grumble...
21.5" doesn't have a quadcore processor. Not enough room to deal with the thermal overload of a beefy quadcore chip.
All iMacs from the last 18 months or so have had four slots for memory. You do the math.

Sandy Bridge will bring 65W quads at decent clock speeds with very aggressive Turbo. Price should also be reasonable
I guessed it as 4 slots. From the Apple website you can max the ram out at 8. So I guessed it has 4 slots, and they put 2gb in each slot.
Apple offers only 8GB for 21.5" but it supports up to 16GB of RAM. And yes, it has four RAM slots.

That's also the maximum what Lynnfield CPUs and P55 chipset support.
