I'm attempting to apply a drop shadow to some text I have in an Illustrator CS3 document. Drop shadow should be under "Effects>Stylize>Drop Shadow" however all I see under stylize is "Glowing Edges." What gives...!?

In the "Effect" menu there's separate "Illustrator Effects" and "Photoshop Effects" sections.

You want the "Stylize" command in the upper "Illustrator Effects" section.

Why it's laid out like that I have no idea.
