Has anyone figured out how to do anything other than add stations on the phone itself? I want to change the names of the stations, but I can't seem to figure out if this is possible. Anyone?

I don't think you are supposed to change the stations. I mean, I could be wrong. I just got introduced to Pandora, but I think the point is of the station naming is to identify the subsequent tracks that will be played based off the original track/artist you suggested.

You can rename them online, I am just wondering if anyone has figured out how/if you can do that from the phone.

Currently, as far as I've experienced with Pandora for iPhone/Touch, the software does not yet support renaming of stations. I'm sure they will soon add the ability to do so.
