I'm looking to upgrade my 2017 MacBook Pro and was wondering what the upto date version is.

Apple no longer makes a 15" MBP. If you want to stay with a MBP, your options are either the 14" or 16." If you want to stay with a 15" screen regardless, the M2 MBA is an option to consider.

I'm looking to get a 16 inch mbp but I don't know if I need the m3 pro or max. I use Adobe lightroom for my photography

For Lightroom, I reckon m3pro will be fine.

Base model comes with 16gb RAM and a 512gb SSD.

I'd suggest that you special-order with a 1tb SSD.
REASON WHY:
The 512gb SSD is not "slow", but... the 1tb SSD is fully TWICE as fast (due to internal memory chip arrangements).
The faster SSD will make any operations that "hit" the drive (such as caching) faster, also.
