I did my first jailbreak & unlocking this past week..I have a couple questions...When apple releases the new firmware 3.0.1 will it cause my 3g not to work? I have TMobile and the last thing I need is for my phone to stop working while my wife is trying to get in touch with me...Is it true if I dont install the new firmware via itunes and stay with 3.0 I should be ok?

Yes it is true. You dont have to update and if there isnt any significant reason to, i dont do it. I never updated to 2.2.1. I stayed at 2.2 till 3.0 came out.
 
You dont install any updates from itunes for the iphone unless there is an updated version of the jailbreak software.
If you do your phone will be locked again.
Itunes doesnt force the update on you, you dont have to update if you dont want to. It might give you a message that theres an update but thats about it.
Keep your eyes on this site for updates and jailbreak/unlock tools for the iphone.
