I'm using the GM how do I stop it asking me to install 10.11.1 beta?

Use officially released El Capitan to do a clean install. Then, you will be opt out from beta program.

Then backup, and clean install, and restore from backup.
Or, you can simply wait, and download El Capitan published in Mac App Store. I am not sure but this may be able to bring you out from beta testing program.
And if you don't want to see it, don't let Mac App Store send notifications before official version is released.
