It seems with the 24” iMac and the studio display, Applecare can change the stand out.

I’m wondering can they also do they same for a 2017 5K iMac?

I have one with the normal stand and I’d like to be able to VESA mount it instead.

I bought something like this from China for my iMac 2017. The initial setup/assembly is a bit sketchy, but once done the whole thing is quite solid. The existing stand is now "hanging mid-air" which I place a gen 1 Magic Trackpad and a Griffin PowerMate on, with total clearance underneath for placing keyboard or other documents.

We use one like this that we got from Amazon and it works fine with our 27" iMac. There are two issues to consider:
  • the hole sizes vary between similar but different vintages of iMac so you need to read the descriptions carefully to be sure that the device is compatible with your iMac.
  • the iMac is HEAVY compared to the typical monitor. Many VESA arms will have some challenges handling the weight, so choose your VESA arm with that in mind.
