I have a 2010 21.5'' iMac. I know you can add a single external monitor to it. I was wondering however, if you could add a second monitor to have a total of 3 screens (iMac + 2 monitors). If so, how can this be accomplished?

Unfortunately your iMac is only able to support one external monitor. However, you can use third party hardware to split the iMac's signal over two or more devices. The only one I've been able to find that is compatible with DisplayPort is the Matrox DualHead2Go, which would set you back about £160.
