I am considering the purchase of a 20" iMac core duo. For memory I was thinking about going for 1GB. Now my question is: how much faster is 2x512 going to be than 1x1024 and is it really worth sacrificing the possibility of a future upgrade to 2GB?

Some kind person on MacRumors did run benchmarks a while ago; the difference was just about measurable (a few seconds on a 15 minute benchmark run), but not noticable. The money you lose when you upgrade from 2x512 to 2x1GB and have two unused chips will be _very_ noticable in your pocket.
As everyone else said, go with the single 1 gig stick. You'll be kicking yourself when you try buying ram in the future and realize all the slots are taken up...
