Which drivers should I download for use with Windows in Boot Camp on the iMac ? Will the standard Windows drivers from the AMD site be the ones ?

There are alternatives, but you should start by installing the drivers that Apple supply - just insert your Leopard DVD once booted into Windows and follow the prompts.

I read through a couple of pages, and now I'm more confused, as some are saying the Catalyst drivers from AMD's site do work, and others say it does not.

Can anyone give me a answer regarding this ?

I've found graphics glitches with the latest iMac drivers (both on Bootcamp beta 1.3 and Leopard Final Release drivers), but using Mobility Modder and the latest drivers from AMD/ATi have resolved those.

Use the AMD drivers. They do work, I've been using them for months, and they improve performance a LOT.

You have to mess around a little to install them, but there are plenty of guides on how to do it on this site and others (I guess eidorian's link should explain it).

The drivers on the Leopard DVD are out of date somewhat. I suspect Apple is just playing it safe.

You can upgrade to the latest ones by going to Device Manager > Display Adaptors > and clicking update driver
