Hi!

I plugged in an external SSD drive and boot Mac OS from it. It's working fine!

Can I turn off internal HDD without opening iMac's case? HDD sound is annoying
 
I don't know if you can without third party software but You can try to download the demo of Paragon NTFS that lets you decide what hdd are mounted on start up.

I just connect SSD via thunderbolt 3, install OS X from App Store and choose boot drive in system options

I know that, but when you have booted the OS all hdd are mounted. With Paragon you can choose which hdd are mounted after startup. I have an hdd always connected that i don't usually need so when i start my iMac it is unmounted by default.
