I am considering buying a used iMac 27 2015 - 2017. It will be used for image editing of RAW files. What will be the best GPU solution?

Consider the CPU also. I had a 2015 i7 iMac with whatever the top GPU was then, with 32 gb RAM. It had no trouble with D800 and D810 RAW files (using Lightroom) but D850 RAWs slowed it so much that it was unusable. For example, I would move a slider and it would take 2-3 seconds for anything to happen.

So I would try hard to set up a test for any machine you're looking at -- some of your actual RAW files, and then whatever app you use to process them.

I went for an iMac Pro, but I'm sure a newer iMac can handle anything.

I have a 2010 iMac 27 i7, 32gb ,1TB SSD but think it's time to upgrade soon. I'm stuck with High Sierra
I'm using Capture One pro, affinity and NIK collection when editing.
The RAW files are mostly from fuji X cameras and some Nikon D7000

Get the 2017 model, preferably with an SSD.
Not sure if the Apple refurbished store still sells 2017's, but if they do, that's the preferred place from which to buy.

I do a lot of editing RAW files (e.g., Lightroom, Adobe Camera Raw, D850).
I had a 2014 iMac and the base (discrete) GPU was more than enough. More important is an SSD and a decent CPU, and a moderate amount of RAM (like 32GB).
Watch out: the earlier 5k iMacs (like 2014, 2015) often suffer from image retention and/or pink edges on the screen. Carefully check this out before buying. Sucks to have screen issues when doing image editing.
