Looking for some advice

I'm a fashion designer doing print design but working on a relic of 2008 Pro Mac.. Everything pretty dog slow on it now

Was looking at getting the new iMac but saw some reviews saying its more of family computer now than a work one.

Dos anyone know if the new iMac will run Photoshop and Illustrator will run with ease???

Compared to a 2008 Mac, yes.
Geekbench CPU multi-score:
2008 Mac Pro: 907
2023 M3 iMac: 11697

Get the maximum (24GB) RAM, because Adobe apps are very demanding on Apple Silicon memory.
For some power users, the M3 iMac will not be the best experience.
Best way to find out is take advantage of the 14-day trial period (assuming you are in a country where this is available). It is the whole point of the 14-day return period, so you can try before you commit, and Apple encourages you to do so. It puzzles me why so few people do this, and instead overbuy "to be safe."

A big question in my mind is whether the 23.5" screen will be enough/ideal. For photoshop I like to have lots of space, even two screens (one for panels/palettes). However, this depends on what you are coming from and your preferences.

For longevity, I'd suggest an m2pro Mini instead of an iMac.

If you're going to use several memory-intensive apps at once, you might even consider 32gb of RAM.

And a good 4k display.
