So Cal....
Unfortunately I don't have the money to purchase a Mac mini YET just for HTPC usage, but I do have an iMac.

I currently have my 24" iMac setup to run Plex on my 52" Samsung LCD.

What I want to know: Would it be possible to split the video and audio signals to my other 2 LCD's in the house? 1 iMac 3 LCD TV's?

If you like the Plex interface why not invest in a low end :apple:tv from the 'bay and hack it to run XBMC. The mediastream skin was originally developed for XBMC and the controls are virtually the same, + you get all the additional bells and whistles that come w/an :apple:tv

I had just the :apple:tv at first but got frustrated by the rip/encode process that I had to go through to get my movies to play on it as well as the constant dropping out of iTunes. I ended up using primarily XBMC on it so that I wasn't limited to just my rips/encodes. Now I have a Mac Mini (substitute your iMac in your example) to take care of the complex tasks and the :apple:tv is just a media extender.

The patchstick hack isn't that complicated and XBMC is pretty solid once you get it up and running.
