Hello,
I would like to purchase an iMac for my small business, switching over from PC. We need it for basic office tasks, and for video editing. Do you knowledgeable people have a recommendation as to what would be the least expensive model that would satisfy these conditions?

Thanks!

Ideally, you would probably want the 27" i5 quad, but if that's too much, it can be done with the i3, just not quite as fast.

The best you can get, it's a business write off
It's also a tool
Faster tool = more productivity
For a few hundred $ extra you get 3-5 years of high end productivity
It will make ur staff more efficient. Every minute wasted is $ wasted, and would be a lot more expensive then the few extra hundred for a higher end mac

We have an HD camcorder, and we'll be taking the footage, doing very basic cutting, putting it online, and at some point, making some DVDs.

I agree with alust2013 and biggd, go for the i5 or i7 model. You might pay a bit more now, but you won't have to worry about a new mac for a couple of years then.
