iMAC software and specs?

Hey a pc user here finally making the switch. I'm buying an imac in the next one or two days and I have two questions.

Does anyone have any recomended software for imac users in general. Any must have apps? i dont mind if they cost.

Secondly i7 or i5 and 8gb ram or 4gb?

PeerGuardian
Little Snitch
Adium (if you use instant messaging)
Colloquy (if you use IRC)

Aside from these... what are you gonna do with your iMac. Could suggest a lot more but damned if i know if you'd even be remotely interested in using them.
