I'm debating between the 21.5" and the 27", and although I'd prefer the 21.5" and think its 3.6ghz i5 will do the trick, I keep getting hung up on the fact that that smaller iMac has a slower video card.

My main "power uses" are Aperture 3 and Starcraft 2.

I know that at similar resolutions the 5750 will eat the 5670 for lunch, but how about when running at each of their respective screen sizes? Is the 5670 @ 1920x1080 faster than 5750 @ 2560x1440???

Definitely not. A lot of people blow the resolution out of proportion when it comes to gaming potential. In fact Starcraft2 only loses 5-10fps when going from 1920x1080 to 2560x1440 on windows.

That can be pretty significant, and can mean the difference between playable and unplayable. Going from 20fps to 30fps is only 10fps, but represents a jump of 50%. I've been trying to google some benchmarks, but I can't seem to find anything.

Yes, but in this case, you only lose 20% fps when going from 1920x1080 to 2560x1440 on the mobility 5850. Whereas mobility 5730 is 50% as powerful as mobility 5850.
