Sorry if this is a repeat question. Finally diving in to setting up iMessage between my iPhone and ipad2.

Can my non-apple friends Text to iMessage? Do they text to my iCloud email address only then? So they need to save that address in their contacts. Correct?

Only Apple devices can iMessage. Anyone else must send you a regular text message (which only applies if you have an iPhone, obviously).

iMessage is just a Jabber client power by the same backend as FaceTime and push notifications. If you can extract an iDevice's SSL certificate and correctly setup a Jabber client, you can use almost any IM software to iMessage with people.
