so i went to iMessage some from my iPhone to a iPad yesterday and the person said they could see my phone number. is there anyway that i could change that so they could only see my email address/apple ID?

I may be wrong, but I believe you can change that in settings>Messages>Recieve At>Caller ID>select which to display

Yes. Go to Settings > Messages > Receive At > Caller ID

You can also register your other e-mail addresses if you would rather use one of them instead.
