I have iMessage on my mac but no iOS devices. I often use Notes to scribble things down as they come to mind as a constantly updating list of things to remember. Sometimes I would like to be able to send the Notes list to myself in various ways...

Is it possible to send Notes via iMessage to generic cell phones as SMS "texts". This, for example, would be very convenient for grocery shopping when I don't have a printer.

No, iMessage can only be used between Apple devices.

Another pro to using all Apple is that Notes also syncs between devices so, if you create a note on your Mac it will push to your iCloud, iPhone, iPad, and iPod Touch.

Notes can also be synced to your gmail label, but you can only edit on a mac or idevice.
