I noticed iMessage stopped working after updating my iPhone 4 to iOS 5.1, so I tried to disable iMessage and re-enable it, but now it's stuck in 'Waiting for activation'.

Any help please?

Try a hard reset ... hold power and home buttons until the white apple appears, then let go.

If this doesn't help, you might need to reinstall the update - a clean install, as it's called where you do a full restore. PITA, but usually gets rid of weirdness.

Another possibility - one or more of your apps may be having issues with the update, particularly if you have an app that runs in the background - like a weather or news app.

Ditto! I had to do a restore only bc I couldn't send and get photos after updating to 5.1. Now I can get and send pics but I can't do Imessage anymore.
