I received some google talk messages today at work (via google talk in google+) and when I got home, the messages from my friend were in iMessage. When i replied, the text field was labelled Google Talk instead of iMessage.

I haven't noticed this before. Is this new in Yosemite recently?

The app is called Messages and it deals with a few other services like Google Talk and has for a while now I thought?

Yup. It covers:

Skype
Google Talk
Yahoo
AIM/AOL
MSN
iCloud/.Mac *of course*

and any other service of which you have the info to setup on your Mac. It's a great all-in-one, with video conferencing (just like iChat, which begs the question why FaceTime is separate when Messages supports video - and audio - conferencing).

So this covers Google Hangouts (I assume that's what Google Talk is called, I ran a search for it and got Hangouts)?

The terms are different and thats really the only reason why I'm asking. This would be a boon, as I would no longer have to keep Chrome open hogging resources to receive notifications for Hangouts messages..

Messages has supported Google Talk/Hangouts for awhile now. Just go to Messages preferences (or Internet Accounts in System Preferences) and add the Google account.

Facebook chat is also supported :)

It seemed new to me, because I'd never actually used Talk in iMessage before. It was the first time I had received any GTalk messages in it before. Checking preferences, I saw that my google account was configured so I assumed it was just integrated.

I must have set that up long ago and forgot about it.

Can't reply on Computer

Not able to respond to messages on the computer; but handoff totally sees that I'm responding to messages?? Not sure why?

EDIT: It works for iMessage, and I can RECEIVE messages from other platforms, just seemingly can't respond?

Wait, I had no idea I could integrate Skype with Messages? I don't see the option for adding a Skype account though? Would be really useful if I could do this.

You can't.

Ah OK, it was just after I read this comment.. Oh well, Skype integration into FaceTime and Messages would've been too good to be true.

Skype? I'm assuming you mean by the Jabber method in Messages?
