Is anyone else having this glitch? Every option in which nicknames can be turned on/preferred has always been turned off and I never had an issues with the previous iOS’. However, since upgrading to iOS15, iMessage uses the nickname for every one of my contacts that has one. I’ve double checked to make sure something new hadn’t been turned on, but everything still seems to be set to off.

Any ideas?
 
Try the following:
Enable all nickname options, go to main settings page, then turn off all nickname options again

Its worth a try

Me too. Same issue. Tried PeteLP's suggestion too. Have been toggling on/off and turning phone on/off and problem persists.
 
Good suggestions, but I'm totally sure in this case that it's not relevant. This is a brand new problem that suddenly started up, with no changes or suggestions or some other info on the contacts.
