I must be doing something wrong with the new version of iMovie. When you initially elect to create a project you are prompted to pick a theme. When I pick the them I see no indiction of a theme whey I play back my project. I do see where you can add a theme between clips, but that doesn't make sense that it would work that way as the them would show up as a transition.

Also, I hate the Ken Burns effect. It's so much work to alter each clip. If you don't alter the clips then much of your picture won't display. I like the idea of iMovie for the iPhone, but so far I'm not happy with the implementation.

Pull in your clip and put it in the timeline, then to select what you want, double tap the clip in your timeline and you can edit stuff, most of the theme related stuff has to do with the text selections though, or if you double tap the transitions there are also a few selections. Took me a minute to find it myself. Not too intuitive, but it works.

I think for a 'theme' transition to work, it must be uses during a movie clip, not a still.

I movie will be cool, but it needs a big update.

Maybe I'm not understanding the intent of themes on the iPhone version. I know how it works on the Mac.

I would call them One Element themes and the one theme applies to the entire project. Fortunately individual clips can be labeled separately within the scope of the same theme.

I don't know if this is the correct answer, but I experienced the same problem with the first movie I made, using existing iPhone vids I had on my phone. I added the vid first and then I tried to apply the theme. I think that might have been my problem. That project still won't accept a theme even though I had tried to add one many times. Maybe it's a bug but I would recommend selecting the theme first and then adding the clips. I haven't experimented too much yet, but perhaps from there you can change the theme as needed. See if that works for you.

Something else to consider is, maybe the app wasn't working right the first time. Most newly installed apps usually like it if you restart the iPhone before using them.

Not exactly a manual, but you could expand all sections and print it out as a PDF and make your own "manual". I put mine in my iBooks.
