How do I do this? I see on Apple's Keynote Compatability page that it says that Keynote can import Excel files, but I cannot find any way of doing this other than copying & pasting data from the Excel spreadsheet into the Chart Data Editor in Keynote, which is impractical for reasonably large amounts of data. Is there some way?

Never worked with Keynote, but in PowerPoint you can insert a new slide that has a graph built in. You then make changes to that graph. I would think there would be an import option for Keynote somewhere. Have you tried "Help" to see what it says?

You probably have to wait until iWork has a spreadsheet component.

And then you might be able to import it straight into Keynote, or you may need to convert it to an iWork spreadsheet and import that. But we won't know until the iWork spreadsheet gets released.
