I am creating a sparse bundle disk image with encryption, but the options are telling me that 128-bit AES encryption is recommended, and 256-bit AES encryption is more secure but slower.

In what way is this slower?

Why wouldn't you try it? Create a new test one with that encryption and give it a try

Yes, 256-bit AES encryption is slower. It really depends on your sparse bundle size and hardware spec
